Bringing back a good ol fashioned sarmie’!
When it comes to an easy lunch, I’m all for it. But that doesn’t mean you have to sacrifice deliciousness. This recipe fills me with nostalgia from the years of eating toasted chicken or tuna mayo sarmies from my primary school tuck-shop. If you’re not South African a “sarmie” is our way of saying sandwich hehe!
I use this ‘cheeky’ mayo filling on sandwiches, bagels, salads, wraps or on crackers. Quite honestly it’s just so damn delicious I often eat it straight out the bowl haha!
I hope you enjoy it as much as I do.
What you will need:
Cheeky Mayo filling: (serves 2)
- x1 can chickpeas drained and rinsed (if you are sensitive to chickpeas you can also use cannelloni or butter beans)
- 1/4 small red onion finely chopped
- 1/2 lemon
- x2-3 tbsp vegan mayo of choice (I use the regular Vegan mayo from Woolworths)
- Salt & pepper to taste
- Pinch of dried oregano
- x1 tsp sesame seeds
- *Optional pinch of chilli flakes
Method:
- Place all ingredients int a bowl and mix together to make sure the chickpeas are coated.
- Using the back of a fork, start crunching the chickpeas until they are 50% crunched (or to your desire consistency)
Open Sarmie’
Ingredients:
- Rye bread – toasted
- x1 large tomato
- Hand full of spinach
- Hummus to spread
- Sesame seeds to serve
Build your Sarmie’
- Bread or toast
- Hummus
- Lettuce
- Tomato
- Cheeky mayo
- Sesame seeds
