Lets make delicious and healthy banana bread!

It’s time to fill your home with the most delightful smell of warm chocolate banana bread. I dreamt up this recipe on a mission to find a sweet treat for the weekends that was both healthy and delicious, I hope you enjoy it as much as we do!
Ingredients:
- 3 large overripe bananas , mashed. (If you have small bananas use 4)
- 2 chia eggs (2 tbsp ground chia seeds mixed with 5 tbsp warm water, set aside)
- 1/2 cup melted vegan butter
- 1/2 cup maple syrup
- 1/2 cup almond milk (or any plant based milk)
- 1/3 cup cocoa powder
- 1/2 tsp bicarbonate of soda (baking soda)
- 2 tsp baking powder
- 1 tsp vanilla
- 1 cup self raising flour (I used spelt flour)
- 3/4 cup chocolate protein powder
- 1/2 cup vegan chocolate chips
Lets get baking:
- Preheat oven to 190°C.
- Begin by preparing your chia eggs. In a small bowl, mix 2 tbsp of ground chia seeds with 5 tbsp of warm water. Set aside.
- In a medium mixing bowl, mash the ripe bananas. Then, mix with maple syrup, melted vegan butter, almond milk, and vanilla. Then, add in the chia eggs, baking soda, and baking powder. Mix well.
- Add cocoa powder, mix until smooth. Then, add oat flour and protein powder and mix until combined.
- Fold in chocolate chips and pour the batter into a 9×5 loaf pan sprayed with baking spray. Option to top the loaf with more chocolate chips!
- Bake in the oven for about 40-50 minutes (depending on heat of the oven).
- Poke the banana bread with a toothpick or knife to make sure it’s done. The knife should come out almost completely clean.
Rest the banana bread to cool before cutting. Store in an airtight container.
