Blondies baby!
Time: 45mins Makes: 8-10 squares Dietary: Vegan/ Vegetarian Difficulty: Easy
The show stopping blondies that didn’t last one full day in our house.
Ingredients:
- 2 ripe bannas mashed
- 1/2 cup peanut butter
- 1/3 cup maple syrup or honey
- 1tsp vanilla extract
- 1 chia egg *which is 1 Tbsp blended chia seeds + 2.5 Tbsp water. (or regular egg)
- 1 cup oat flour or any regular/self raising flour (I use 1 cup of rolled oats blended)
- 1tsp baking powder
- 1/3 cup dark chocolate chips *optional – a few more to sprinkle on top
You will need:
- Brownie tin 8×8 (I coated mine in baking paper & a little coconut oil to prevent sticking)
Lets get Baking:
- Preheat oven to 180°C
- Line the brownie tin.
- Prepare your chia egg and set it aside to swell
- Mash bananas in a big bowl
- Blend oats to make oat flour and add to the bananas
- Add all of the remaining ingredients to the bowl *don’t forget the egg (I almost did)
- Stir through the chocolate chips
- Once everything is combined, place in the brownie tin.
- Bake for 15mins or until a knife comes out clean.
Let them cool for 15 mins & ENJOOOOYYYYY!
p.s don’t burn your fingers on the oven, mine are still roasted lol.
