Blondies baby!

Time: 45mins    Makes: 8-10 squares    Dietary: Vegan/ Vegetarian    Difficulty: Easy

The show stopping blondies that didn’t last one full day in our house.

Ingredients:

  • 2 ripe bannas mashed
  • 1/2 cup peanut butter
  • 1/3 cup maple syrup or honey
  • 1tsp vanilla extract
  • 1 chia egg *which is 1 Tbsp blended chia seeds + 2.5 Tbsp water. (or regular egg)
  • 1 cup oat flour or any regular/self raising flour (I use 1 cup of rolled oats blended)
  • 1tsp baking powder
  • 1/3 cup dark chocolate chips *optional – a few more to sprinkle on top

You will need:

  • Brownie tin 8×8 (I coated mine in baking paper & a little coconut oil to prevent sticking)

Lets get Baking:

  1. Preheat oven to 180°C
  2. Line the brownie tin.
  3. Prepare your chia egg and set it aside to swell
  4. Mash bananas in a big bowl
  5. Blend oats to make oat flour and add to the bananas
  6. Add all of the remaining ingredients to the bowl *don’t forget the egg (I almost did)
  7. Stir through the chocolate chips
  8. Once everything is combined, place in the brownie tin.
  9. Bake for 15mins or until a knife comes out clean.

Let them cool for 15 mins & ENJOOOOYYYYY!

p.s don’t burn your fingers on the oven, mine are still roasted lol.
