Let’s get cooking!
When it comes to a Dahl you either LOVE it or you’re thinking… “What the heck is that?” haha. A Dahl is simply a veggie curry using split pulses as a base, in this case red lentils.
This recipe is just too good not to share! I think I cooked this dish over 1000 times last year and honestly never got sick of it, this is definitely one of my fave meals. Packed full of healthy, delicious flavours. So super simple and perfect as a leftover lunch throughout a busy week. (Perfect for big batch freezing)
INGREDIENTS:
– 1 bunch (Hand full) coriander
– olive oil
– 1 brown onion, fine chopped
– 2 garlic cloves crushed
– ground ginger
– 3 tbsp red curry paste
– 1 cup red lentils
– 400g canned chickpeas
– 400ml coconut milk
– handful of spinach leaves
– fresh lemon
🍚 steamed brown rice to serve
RECIPE:
- Add the brown onion with ginger & garlic in olive oil – fry until onions are translucent
- Add coconut milk & curry paste
- Add chickpeas & one cup lentils
- Add X2 cups of hot water for the lentils to soak up
- Stir around & mix all ingredients together
- Cover and simmer for 20mins
- Add chopped coriander & spinach leaves
- Stir & simmer for 5-10mins
- 🍲 Serve with brown rice & a squeeze of fresh lemon
